Spicy Sausage with Spinach Penne

Ingredients
- 1 pack ElNokhba penne pasta
- 2 tbsp olive oil
- 1 lb (450g) spicy Italian sausage, casings removed
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 100 g cherry tomatoes
- 4 cups fresh spinach
- Red pepper flakes (optional)
- Salt and black pepper to taste
- Grated parmesan cheese
Instructions
- Cook penne pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add spicy Italian sausage and cook until browned, breaking it apart with a spoon.
- Add chopped onion and minced garlic to the skillet, cooking until the onion is translucent.
- Add cherry tomatoes and let the mixture simmer for about 10 minutes.
- Add fresh spinach to the skillet and cook until wilted. Season with red pepper flakes (if desired), salt, and black pepper.
- Toss the cooked penne into the spicy sausage and spinach mixture. Serve hot, topped with grated parmesan cheese.
