Spicy Sausage with Spinach Penne

Ingredients
  • 1 pack ElNokhba penne pasta
  • 2 tbsp olive oil
  • 1 lb (450g) spicy Italian sausage, casings removed
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 100 g cherry tomatoes
  • 4 cups fresh spinach
  • Red pepper flakes (optional)
  • Salt and black pepper to taste
  • Grated parmesan cheese
Instructions
  1. Cook penne pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add spicy Italian sausage and cook until browned, breaking it apart with a spoon.
  3. Add chopped onion and minced garlic to the skillet, cooking until the onion is translucent.
  4. Add cherry tomatoes and let the mixture simmer for about 10 minutes.
  5. Add fresh spinach to the skillet and cook until wilted. Season with red pepper flakes (if desired), salt, and black pepper.
  6. Toss the cooked penne into the spicy sausage and spinach mixture. Serve hot, topped with grated parmesan cheese.
