Couscous with Tomato Paste

Ingredients
- 1 cup ElNokhba couscous
- 500g chicken
- 2 cups vegetable or chicken broth
- 2 tablespoons ElNokhba tomato paste
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Sauté the chicken.
- In a medium-sized saucepan, bring the vegetable or chicken broth to a boil.
- In a separate skillet, heat olive oil over medium heat. Add finely chopped onions and sauté until translucent.
- Add minced garlic and continue to sauté for another minute until fragrant.
- Add tomato paste.
- Stir in tomato paste, oregano, and basil into the onion-garlic mixture. Cook for 2-3 minutes to allow the flavors to meld.
- Combine and simmer.
- Pour the boiling broth into the pan with the tomato paste mixture. Stir well to combine.
- Bring the mixture back to a gentle boil, then reduce the heat to low.
- Add the couscous and chicken to the broth mixture. Cover the pan with a lid and let it simmer on low heat for 5 minutes or until the couscous has absorbed the liquid.
- Once the couscous is cooked, fluff it with a fork. Season with salt and pepper to taste.
- Pour the couscous to a serving dish and garnish with fresh parsley.
