Couscous with Tomato Paste

Ingredients
  • 1 cup ElNokhba couscous
  • 500g chicken
  • 2 cups vegetable or chicken broth
  • 2 tablespoons ElNokhba tomato paste
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish
Instructions
  1. Sauté the chicken.
  2. In a medium-sized saucepan, bring the vegetable or chicken broth to a boil.
  3. In a separate skillet, heat olive oil over medium heat. Add finely chopped onions and sauté until translucent.
  4. Add minced garlic and continue to sauté for another minute until fragrant.
  5. Add tomato paste.
  6. Stir in tomato paste, oregano, and basil into the onion-garlic mixture. Cook for 2-3 minutes to allow the flavors to meld.
  7. Combine and simmer.
  8. Pour the boiling broth into the pan with the tomato paste mixture. Stir well to combine.
  9. Bring the mixture back to a gentle boil, then reduce the heat to low.
  10. Add the couscous and chicken to the broth mixture. Cover the pan with a lid and let it simmer on low heat for 5 minutes or until the couscous has absorbed the liquid.
  11. Once the couscous is cooked, fluff it with a fork. Season with salt and pepper to taste.
  12. Pour the couscous to a serving dish and garnish with fresh parsley.
